🥒 Oi Muchim (Korean Spicy Cucumber Salad) Recipe

 

Introduction




Oi Muchim is a popular Korean side dish, especially in summer.
It is spicy, sweet, and tangy, easy to prepare, and pairs well with rice or grilled meat.


Ingredients (Serves 2)



  • 2 cucumbers

  • 1 tsp salt

  • 1 tsp minced garlic

  • 1 tsp Korean red chili powder (adjust to taste)

  • 1 tsp sugar

  • 1 tbsp vinegar

  • 1 tsp sesame oil (optional)

  • A sprinkle of sesame seeds


Instructions



  1. Prepare the cucumbers

    • Wash cucumbers, trim the ends, and slice thinly.

    • Sprinkle with salt and let sit for 10 minutes.

  2. Remove excess water

    • Drain cucumbers in a colander and gently squeeze out water.

  3. Make the seasoning

    • In a bowl, mix minced garlic, red chili powder, sugar, vinegar, sesame oil (optional), and sesame seeds.

  4. Mix everything

    • Add cucumbers to the bowl and toss evenly with the seasoning.

  5. Serve

    • Plate the salad and serve immediately, or chill briefly for extra crispiness.
