Introduction
Oi Muchim is a popular Korean side dish, especially in summer.
It is spicy, sweet, and tangy, easy to prepare, and pairs well with rice or grilled meat.
Ingredients (Serves 2)
2 cucumbers
1 tsp salt
1 tsp minced garlic
1 tsp Korean red chili powder (adjust to taste)
1 tsp sugar
1 tbsp vinegar
1 tsp sesame oil (optional)
A sprinkle of sesame seeds
Instructions
Prepare the cucumbers
Wash cucumbers, trim the ends, and slice thinly.
Sprinkle with salt and let sit for 10 minutes.
Remove excess water
Drain cucumbers in a colander and gently squeeze out water.
Make the seasoning
In a bowl, mix minced garlic, red chili powder, sugar, vinegar, sesame oil (optional), and sesame seeds.
Mix everything
Add cucumbers to the bowl and toss evenly with the seasoning.
Serve
Plate the salad and serve immediately, or chill briefly for extra crispiness.
💡 Tips
Make sure to remove excess water to keep cucumbers crunchy.
Adjust the spiciness by reducing or omitting chili powder.
Sesame oil adds flavor, but it is optional based on preference.
