Korean food lovers, here’s a simple and easy way to make Kimchi Jjigae, the classic Korean kimchi stew! Even if you are new to Korean cooking, you can make this delicious, spicy, and hearty stew at home.
Ingredients (2–3 servings)
2 cups ripe kimchi
150–200g pork belly or shoulder, sliced
1/2 block tofu, diced
1/2 onion, sliced
1 green onion, diagonally sliced
2 cloves garlic, minced
2 cups water
1 tbsp Korean chili powder (optional)
1 tbsp soy sauce
Salt & pepper, to taste
Instructions
Step 1: Prepare Ingredients
Cut kimchi into bite-sized pieces, slice pork, dice tofu, slice onion, chop green onion, and mince garlic.
Step 2: Cook Pork
In a pot, stir-fry the pork until slightly browned. Add minced garlic and stir for 1 minute.
Step 3: Add Kimchi
Add kimchi to the pork and stir-fry for 2–3 minutes. Mix well to combine flavors.
Step 4: Add Water & Seasoning
Pour 2 cups water, soy sauce, and optional chili powder. Bring to a boil, then reduce heat and simmer for 10 minutes.
Step 5: Add Tofu & Onion
Add tofu and sliced onion, simmer for 5 more minutes.
Step 6: Finish
Add green onion, season with salt and pepper. Serve hot and enjoy your Kimchi Jjigae!
Tips for Beginners
Use aged kimchi for deeper flavor.
Substitute ingredients if needed – simple napa cabbage kimchi and pork are fine.
Adjust spiciness by reducing chili powder.
